THIS MONTH'S RECIPE:
Athenian Fish
4 Fish Fillets (tilapia, snapper or mahi;
1- 1 1 /2 lbs)
1/4 tspn pepper
1 tspn Greek seasoning, divided,
1 Tbsp extra-virgin olive oil,
1 Tbsp minced garlic
1/4 cup pre-diced onions
1 (14oz) can quartered artichoke hearts (drained)
1 (14.5 oz) can diced tomatoes (drained)
1/4 cup white wine
***always check fish for bones
PREHEAT large saute' pan on medium-high 2-3 mints, Season both sides of fish w/pepper & 1/2 tsp Greek Seasoning (wash hands)
PLACE oil in pan, then add garlic & onions cook & stir 1-2 mints or until onions are slightly softened.
ADD fish fillets & top with remaining ingredients (including remaining 1/2 tsp Greek seasoning) Cover & cook 8-10 mints, stirring vegetables once, or until fish is 145 degrees (or flesh separates easily). Serve.
